Presto Peach Jam
I am starting to realize how difficult I often make things out the be in life… When in fact. They are often: Quite. Simple.
Take a little peach jam, for instance.
Because I was out of store-bought and friends+family-gifted-jelly/jam, I figured I’d try my hand at it since (lucky me: so easy to make) my husband loves PB&J.
So I took about a cup-full of frozen organic peaches and let them thaw in a small colander in the sink. Meanwhile, I heated up some water with sugar (I don’t measure; that’s why I’m not a baker) just long enough for the sugar to dissolve. (Think simple syrup measurements and add – or not – depending on your sweetness preference).
When the peaches were mostly thawed, I tossed them into the pan with the water-sugar-mixture; lid on and heat low. I set the timer for 5 minutes.
When I returned, the peaches were soft enough to mash so I took them – and the syrupy substance – out of the pan and into an immersion blender; blended away and smoothness ensued. I then sampled to test the level of sweetness and decided to toss in another teaspoon of organic sugar; then blending once more.
A smooth, creamy consistency and beautiful peachy color later… I transferred my little miracle concoction to a small canning jar, tightened the lid, and voila: homemade organic peach jam! Or whatever you happen to have on hand.
